Traditional collection, natural process


The main objetive of la Cepa de Pelayo winery is to re-elaborate the wine in its most basic essence. A concern for art, architecture, a esthetics and good work, all linked to wine, makes our winery take up the idea of returning to the primary, the primodial manual work and what is really important for wine.

Taking advantage of the knowledge and legacy of our previous generations, with a vineyard of more than 50 years, an exquisite, ecological and artisanal care of the grapes, collected by hand in boxes, refrigerated before treatment, even separated according to their original plot, stored in concrete tanks with fully controlled temperature for fermentation and a temperature controlled basemente with French oak barrels. The result we can offer to our customers are excellent wines of very high quality, cich is the main objetive of our project.

Preparation of White Wines


Our Ole de Pasion White Wine is made with the 100% Macabeo white grape variety, a native variety from the Manchuela area, which is raised in our vineyards.


It is a fantastic white wine raised on lees, the result of an artistic blend of a 6-month white wine in concrete with another 6 month-old white in French oak barrels.

White Wine

Elaboration of Pink Wines

Our wine Ole de Rosé is made with the Bobal 100% grape variety, a native variety from the Manchuela area, which is grown in our vineyards.


Traditionally the Bobal has always worked to improve the characteristics of other varieties, but without a real chance to show their own. La Cepa de Pelayo offers an excellent hight quality rose wine, raised on lees for 7 month in concrete, from this wonderful 100% Bobal variety.

Elaboration of Red Wines

Our red wine Ole de Aaromas is made with the 100% Bobal grape variety, a native variety from La Manchuela area, which is raised in our vineyards.


Traditionally the Bobal has always worked to improve the characteristics of other varieties, but without a real chance to show their own. La Cepa de Pelayo offers an excellent red wine of hight quality, raised on lees for 7-month in concrete, of this wonderful variety of Bobal 100%.

Red Wine

Elaboration of sweet wines

Our sweet Ole de Rosas white wine is made with the 100% Macabeo grape variety, a native variety from the Manchuela area, which is raised in our vineyards.


The grapes from a late harvest at the end of September, is subjected to a process of fermentation stop by cold (cold room) and desinfected by the addition of sulfur dioxide.

All manual

The harvest of our grapes is done entirely manually, selecting only the best grapes and storing them in boxes, so that they are not beaten or mistreated, and this prevent the beans from breaking and reaching the winery in the best possible conditions.
